The nettle tart


  1. Gather a bunch of young tender nettle shoots
  2. Blanche them
  3. Roll out the pastry base
  4. Spread the nettles evenly over the base
  5. Beat 3 eggs, with 30cl of fresh cream, a pinch of nutmeg, salt and pepper
  6. Bake in the oven at 200C for 30 minutes
  7. Serve hot
